Sometimes you need something warm when you get home from the office. My wife used to make a version of shakshuka that was pretty easy. It’s just a few things cooked together.
Simple Shakshuka
- Canned tomatoes
- Onion
- Bell pepper
- Eggs
- Put the canned tomatoes and chopped onion into a pan. Let that simmer for about ten minutes.
- Add the chopped bell pepper to the pan and let it cook until soft.
- Carefully make little spaces in the sauce and crack the eggs into those spaces.
- Cover the pan and let it sit on the stove until the eggs are cooked through.
That’s it. No need for extra stuff. Just simple, and you can forget about it while you watch the news.
