Hey everyone. Just a quick one for today. It's a chilly one in Edmonton, Edmonton, so nothing too fancy. Here's a simple dinner that works for a bus busy week.

Roast Chicken and Potatoes

This is a classic. Easy, reliable, and uses stuff you can always find at at the grocery store.

  • Chicken (whole, about 3-4 lbs)
  • Potatoes (about 2 lbs, any kind)
  1. Preheat oven to 400°F (200°C).
  2. Chop potatoes into chunks. Toss with a little oil.
  3. Place potatoes in a roasting pan.
  4. Place chicken on top of the potatoes.
  5. Roast for about 1 hour and 15 minutes, or until chicken is cooked thr through.

That's it. Dinner's served. Pepper is optional, but not really necessar necessary.
