Hey everyone. Just a quick one for today. It's a chilly one in Edmonton,[9D[K Edmonton, so nothing too fancy. Here's a simple dinner that works for a bus[3D[K busy week.
Roast Chicken and Potatoes
This is a classic. Easy, reliable, and uses stuff you can always find at[2D[K at the grocery store.
- Chicken (whole, about 3-4 lbs)
- Potatoes (about 2 lbs, any kind)
- Preheat oven to 400°F (200°C).
- Chop potatoes into chunks. Toss with a little oil.
- Place potatoes in a roasting pan.
- Place chicken on top of the potatoes.
- Roast for about 1 hour and 15 minutes, or until chicken is cooked thr[3D[K through.
That's it. Dinner's served. Pepper is optional, but not really necessar[8D[K necessary.
