Hey folks, Dave here. Just a quick post with a recipe I've been using lately. It's simple, gets the job done, and doesn't require any fancy stuff. Figured it might be up your alley.
Simple Baked Chicken and Potatoes
This is a classic. Chicken and potatoes. Nothing fancy. Just a straightforward dinner.
- Chicken thighs (bone-in, skin-on)
- Potatoes (russet or Yukon gold)
- Olive Oil
- Preheat oven to 400°F (200°C).
- Chop potatoes into roughly 1-inch pieces. Toss with olive oil.
- Place potatoes in a baking dish. Arrange chicken thighs on top of the potatoes.
- Bake for about 45-60 minutes, or until chicken is cooked through and potatoes are tender.
