Simple Fish & Chips
This is a quick and easy Fish & Chips – perfect for a weeknight! It’s all about simplicity.
- Protein: 1 lb Cod fillets, skin on
- Starch: 6-8oz Potatoes, peeled and cut into chunks
- Vegetable: 1 Onion, chopped
- Seasoning: Salt & Pepper
- Preheat oven to 400°F (200°C).
- In a bowl, toss potatoes with salt and pepper.
- Spread potatoes in a single layer on a baking sheet.
- Place cod fillets on top of the potatoes.
- Bake for 20-25 minutes, or until fish is cooked through and potatoes are golden.
- Serve with the baked potatoes.
