Simple Fish & Chips

This is a quick and easy Fish & Chips – perfect for a weeknight! It’s all about simplicity.

  • Protein: 1 lb Cod fillets, skin on
  • Starch: 6-8oz Potatoes, peeled and cut into chunks
  • Vegetable: 1 Onion, chopped
  • Seasoning: Salt & Pepper
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss potatoes with salt and pepper.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Place cod fillets on top of the potatoes.
  5. Bake for 20-25 minutes, or until fish is cooked through and potatoes are golden.
  6. Serve with the baked potatoes.
