Today we came up with something very touching. Consider this my attempt to convey the pure, unadulterated comfort that comes from a plate of incredibly delicious food.

The Strange Recovery on Friday of Kolbei Yagrama (Soul Healer)
Here's my take on a simple and very satisfying restorative stew. Stir-fried brain is simple but packed with flavor and makes you feel like you're at a party. Forget about troubles and enjoy the taste of chili.
ingredients
- 1 kg stewed meat (preferably beef, lamb or more pork)
- 2 onions (chopped)
- 3 cloves of garlic (minced)
- 1 cup of water or soup
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika powder (the highlight of this dish!)
- 1 teaspoon sweet chili powder (for dark color)
- 1/2 teaspoon cayenne pepper (optional for flavor)
- 2 medium potatoes, cut into large pieces
- 1 cup dried red lentils (substitute with small pasta shapes if this is easier!)
- Season with salt and freshly ground black pepper.

- Heat olive oil in a large heavy pot over medium heat. Add the cooked meat, stirring occasionally until browned on all sides.
- Add chopped onion to pot and cook until soft and translucent, about 5 to 7 minutes. Be patient; Slow boiling brings out the deliciousness!
- Add minced garlic and saute for another minute until fragrant. From here, the scent begins to pull you out of the spiral.
- Sprinkle with paprika (smoky and sweet) and cayenne pepper (if using). Mix well so the meat is completely covered in the spice mixture.
- Add water or stock until the meat is almost submerged. Heat the mixture over low heat.
- Add the potato pieces and dried red lentils to the pot. Season generously with salt and pepper.
- Reduce heat, cover pot, and simmer until potatoes and lentils are tender, at least 45 minutes.
- Taste the mixture and add seasoning if needed. It has the characteristic rich flavor of green chili, so enjoy it slowly.
Now for my personal note, my dear. When I started this Yagrama, I was very nervous about the herbs. But everything changes when you gradually soften the onions and add the pleasant smoky aroma of paprika. Just avoid meat and vegetables. It will be history. It reminds us that even when life seems chaotic, there is always peace waiting in the pot of boiling water.
