I've always been fascinated by the alchemy of transforming simple ingredients into frozen delights. There's something so satisfying about crafting a creamy, dreamy ice cream from scratch. And, as you know, I'm all about finding clever substitutions to make gourmet treats accessible to everyone. So, let's get started!
The Ultimate Vanilla Ice Cream Base
Before we get wild with flavors, we need a solid foundation. This vanilla base is incredibly versatile and will serve as the perfect canvas for our more adventurous additions. It's a classic custard-style base, which gives it a luxurious richness. Don't be intimidated by the custard – it's easier than you think!
- 2 cups Heavy Cream
- 1 cup Whole Milk
- ¾ cup Granulated Sugar
- 1 Vanilla Bean, split and scraped (or 1 tsp vanilla extract)
- Pinch of Salt
- In a saucepan, combine the heavy cream, milk, sugar, vanilla bean (and scrapings), and salt.
- Heat over medium heat, stirring constantly, until the sugar is dissolved and the mixture is just starting to simmer. Do not boil!
- Remove from heat and remove the vanilla bean pod. If using vanilla extract, add it now.
- Let the mixture cool completely. This is crucial! Cover with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming.
- Pour the cooled custard into a freezer-safe container. Freeze for at least 4-6 hours, or preferably overnight.
- Churn in an ice cream maker according to the manufacturer's instructions. This will give you the perfect creamy texture.
- Harden in the freezer for a couple of hours before serving.
Substitution Alert! No vanilla bean? No problem! A good quality vanilla extract will work just fine. For a slightly lighter base, you can substitute half the heavy cream with half milk. But be warned, it will be less rich.

Now for the fun part! Here are some flavor combinations, with my signature substitution tweaks, to get your creativity flowing. Remember, a little goes a long way. Taste as you go!
1. Pistachio Perfection
This is a classic for a reason! The nutty flavor of pistachios is divine in ice cream. I like to add a little crunch too.
- Vanilla Ice Cream Base
- ½ cup Shelled Pistachios, roughly chopped
- Pinch of Salt
- After churning the ice cream base in your ice cream maker, gently fold in the chopped pistachios and a pinch of salt.
- Freeze for at least 2 hours to harden.
Substitution Alert! Pistachios can be pricey. You can substitute with finely chopped almonds or even a sprinkle of crushed biscotti for a similar textural element. For a more intense pistachio flavor, try adding a few drops of pistachio extract (available online).
2. Durian Delight (Caution: Strong Aroma!)
Durian is... an experience. It's intensely aromatic and polarizing. If you love durian, you'll adore this ice cream. If you're unsure, start with a very small amount!
- Vanilla Ice Cream Base
- ½ cup Durian Pulp (fresh or frozen)
- 1 tbsp Honey (to balance the strong flavor)
- If using frozen durian, let it thaw slightly.
- Puree the durian pulp with the honey until smooth.
- Gently fold the durian puree into the churned ice cream base.
- Freeze for at least 4 hours to harden.
Substitution Alert! Durian is hard to find. A combination of ripe mango and a tiny bit of almond extract can mimic the flavor profile, though it won't be quite the same. Be warned, it won't have the same pungent aroma!
3. Ketchup Surprise (Hear Me Out!)
Okay, I know this sounds crazy, but trust me on this one! The sweetness of ketchup, combined with a hint of smoked paprika, creates a surprisingly delicious savory-sweet ice cream. It's a conversation starter, for sure!
- Vanilla Ice Cream Base
- ¼ cup Ketchup (good quality!)
- ½ tsp Smoked Paprika
- Gently fold the ketchup and smoked paprika into the churned ice cream base. Don't overmix!
- Freeze for at least 4 hours to harden.
Substitution Alert! Use a tomato paste with a pinch of sugar and smoked paprika if you can't find ketchup. The flavor won't be identical, but it'll still be interesting!
4. Schoolijd (Dutch Licorice) Dream
Schoolijd is a beloved Dutch licorice, known for its distinctive salty-sweet flavor. It's a bit of an acquired taste, but if you're a fan, this ice cream is for you.
- Vanilla Ice Cream Base
- ¼ cup Schoolijd, finely chopped
