Okay, so my wife made this. It's...a lot. She calls it the Poutine Wellington. I'm not sure why. It's definitely not simple. But it's technically a recipe, I guess.
Poutine Wellington
It's a beef wellington...but with poutine inside. Don't ask.
- Beef Tenderloin (about 2 lbs)
- French Fries (frozen, store-bought)
- Cheese Curds (the real stuff)
- Puff Pastry (the kind from the freezer)
- Sear the beef tenderloin in a pan until browned on all sides. Let it cool completely.
- Wrap the beef in puff pastry. Make sure it's sealed well.
- Bake at 400F (200C) for about 45 minutes, or until the pastry is golden brown.
- While the beef is baking, cook the french fries according to package directions.
- Mix the cheese curds with the hot french fries.
- Slice the beef wellington and top with the cheese curds and fries.
It's...an experience. I'll stick to my simple oven dinners, thanks.
