Okay, so my wife made this. It's...a lot. She calls it the Poutine Wellington. I'm not sure why. It's definitely not simple. But it's technically a recipe, I guess.

Poutine Wellington

It's a beef wellington...but with poutine inside. Don't ask.

  • Beef Tenderloin (about 2 lbs)
  • French Fries (frozen, store-bought)
  • Cheese Curds (the real stuff)
  • Puff Pastry (the kind from the freezer)
  1. Sear the beef tenderloin in a pan until browned on all sides. Let it cool completely.
  2. Wrap the beef in puff pastry. Make sure it's sealed well.
  3. Bake at 400F (200C) for about 45 minutes, or until the pastry is golden brown.
  4. While the beef is baking, cook the french fries according to package directions.
  5. Mix the cheese curds with the hot french fries.
  6. Slice the beef wellington and top with the cheese curds and fries.

It's...an experience. I'll stick to my simple oven dinners, thanks.
