Hey there. Not much to say today, just a quick recipe. My wife found this Korean ramen thing. Seems a bit much, but it's just protein, starch, and a veggie, so I figured I'd give it a go. It's a bit more involved than my usual oven-and-forget stuff, but hey, it's a new experience. Don't expect miracles, though.

Korean Ramen (Dave's Version)

This is a simplified take on Korean ramen. I've cut out a lot of the steps. It's still... ramen.

  • 1 lb Chicken Thighs (boneless, skinless)
  • 1 package Ramen Noodles (the kind you cook)
  • 1 Onion
  • 1 Carrot
  1. Cut the onion and carrot into bite-sized pieces.
  2. Boil the chicken thighs until cooked through. Shred the chicken.
  3. Cook the ramen noodles according to the package directions.
  4. Combine the cooked noodles, shredded chicken, onion, and carrot in a bowl.
  5. Serve.

Not bad, I guess. Could have just had a roast chicken and some carrots. But it's... different.
