Hey there. Not much to say today, just a quick recipe. My wife found this Korean ramen thing. Seems a bit much, but it's just protein, starch, and a veggie, so I figured I'd give it a go. It's a bit more involved than my usual oven-and-forget stuff, but hey, it's a new experience. Don't expect miracles, though.
Korean Ramen (Dave's Version)
This is a simplified take on Korean ramen. I've cut out a lot of the steps. It's still... ramen.
- 1 lb Chicken Thighs (boneless, skinless)
- 1 package Ramen Noodles (the kind you cook)
- 1 Onion
- 1 Carrot
- Cut the onion and carrot into bite-sized pieces.
- Boil the chicken thighs until cooked through. Shred the chicken.
- Cook the ramen noodles according to the package directions.
- Combine the cooked noodles, shredded chicken, onion, and carrot in a bowl.
- Serve.
Not bad, I guess. Could have just had a roast chicken and some carrots. But it's... different.
