We're going for that Toronto little shop heat – the kind that makes you sweat and crave another one. This recipe is inspired by my own adventures trying to recreate those patties I used to grab after a late night in the city. Ingredients:

  • For the Dough:
    • 2 1/2 cups all-purpose flour, plus more for dusting
    • 1 tsp salt
    • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
    • 1/2 cup ice water
  • For the Filling:
    • 1 tbsp vegetable oil
    • 1/2 lb ground beef (or lamb, if you're feeling adventurous!)
    • 1/2 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 scotch bonnet pepper, seeded and finely minced (use gloves!) - Substitution: If you're spice-averse, substitute with 1/2 tsp cayenne pepper and a pinch of smoked paprika.
    • 1/2 cup chopped carrots
    • 1/4 cup chopped potatoes
    • 1/4 cup frozen peas
    • 1 tbsp curry powder
    • 1 tsp dried thyme
    • 1/2 tsp ground allspice
    • 1/4 tsp ground nutmeg
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1/4 cup water

Instructions:

  1. Make the Dough: In a large bowl, whisk together the flour and salt. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: Heat the oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the scotch bonnet pepper (or cayenne pepper/smoked paprika substitute), carrots, potatoes, peas, curry powder, thyme, allspice, and nutmeg. Season with salt and pepper.
  5. Add the water and bring to a simmer. Cook for 10-15 minutes, or until the vegetables are tender and the sauce has thickened. Let the filling cool completely.
  6. Assemble the Patties: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Use a round cookie cutter (about 4-5 inches in diameter) to cut out circles.
  7. Place a spoonful of the cooled filling in the center of each circle. Fold the dough over to form a half-moon shape. Crimp the edges with a fork to seal.
  8. Place the patties on a baking sheet lined with parchment paper. Brush the tops with a little milk or egg wash for a golden-brown finish. (Optional, but it adds a nice sheen!)
  9. Bake for 20-25 minutes, or until golden brown and cooked through.
