Sweet potatoes and spicy chorizo hash with halloumi fries
Let's face it: Lindsay Lohan's 2003 film Freaky Friday was a *masterpiece* of improvisation. Although a little confusing, it's a testament to the power of unconventional recipes and true creativity. My culinary journey was similar. We are constantly changing and replacing, always looking for flavor profiles that are both familiar and completely unique. This hash is a good example: it starts with a simple base, but the additives and spices make it special. And of course it *needs* a lot of paprika. A little rebellious, a little quiet and very tasty.

- Raw materials:
- 1 pound sweet potatoes, peeled and cut into 1/2 inch cubes
- 1 pound spicy skinless chorizo (preferably Mexican or Spanish)
- 1 medium onion, finely chopped
- 2 chopped cloves of garlic
- 1 tablespoon olive oil
- 1 tsp smoked paprika powder
- 1/2 tsp cayenne pepper (adjust according to heat tolerance. *This is important!*)
- 1/4 tsp turmeric
- Season with salt and pepper.
- 8 ounces halloumi cheese, cut into 1/2-inch-thick slices
- 1 tablespoon lemon juice
1 tbsp finely chopped fresh parsley (for garnish)
- 1/2 teaspoon paprika
- Instructions:
- Heat the olive oil in a large skillet or griddle over medium-high heat.
- Add the chopped onion and cook until soft, about 5 to 7 minutes.
- Add the minced garlic and fry for another minute until fragrant.
- Add chorizo and cook until browned, about 5 to 7 minutes. Eliminates excess fat.
- Add the sweet potatoes and cook, stirring occasionally, until tender, 8 to 10 minutes.
- Add smoked paprika, cayenne pepper, turmeric, salt and pepper. Cook for 2-3 minutes, stirring constantly.
- Turn off the heat, add the lemon juice and stir.
- Divide the mince between 4 plates.
Top each portion with a slice of halloumi cheese and sprinkle with paprika.
- Garnish with fresh parsley.Replace with comment:
- If you prefer a gentle heat: Reduce the cayenne pepper to 1/4 teaspoon or leave it out altogether.
- For other flavors: While cooking, add 1 tablespoon chopped coriander or cumin.
- For a thicker hash: Add vegetable broth or tomato paste.
- If you don't have chorizo, For a similar flavor, use smoked sausage or pumpkin.
