It's not fancy, but it's easy and uses stuff you can usually find at the supermarket. It's a bit of a departure from my usual oven-and-forget routine, but it's pretty straightforward.
Simple Chicken and Potato Bake
This is a really basic dish, but it fills the belly. It's a good one for a weeknight.
- Chicken Thighs (bone-in, skin-on)
- Potatoes
- Olive Oil
- Dried Oregano
- Preheat oven to 400°F (200°C).
- Chop the potatoes into roughly 1-inch pieces.
- Toss the potatoes with olive oil and oregano on a baking sheet.
- Place the chicken thighs on top of the potatoes.
- Bake for about 45-60 minutes, or until the chicken is cooked through and the potatoes are tender.
