Cookin' Up Some Good Ol' Arkansas Comfort Food
I'm just a regular fella from around here, and I'm happy to share with ya one of my favorite recipes that's straight outta the Natural State.
Bacon Cheeseburgers with Fried Okra
- 1 lb ground beef
- 4 slices of bacon
- 1 cup all-purpose flour
- 1 cup cornmeal
- Preheat oven to 400°F. Cook the bacon until it's crispy, then set aside.
- In a large bowl, mix together the ground beef and cooked bacon. Season with salt and pepper to taste.
- Form into patties and cook in a skillet until browned on both sides.
- While the burgers are cooking, mix together the flour and cornmeal in a shallow dish.
- Dredge the burgers in the flour mixture, shaking off excess.
- Place the burgers on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through.
- Cut the okra into slices and dredge in the flour mixture. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Fry the okra until golden brown, about 3-4 minutes per side.
This recipe is as simple as it gets, but it's also darn good. The bacon adds a smoky flavor that'll make your taste buds do the Arkansas two-step.
