Spicy Sausage & Potato Hash
This is a ridiculously easy hash that’s perfect for a weeknight. It’s got a little kick, and it’s totally customizable. Don’t overthink it!
- 1 lb Potatoes, peeled and diced (Russet or Yukon Gold work well)
- 1 lb Sausage (Italian or Chorizo), removed from casings
- 1 tbsp Olive Oil
- 1 tsp Chili Powder (or more, to taste)
- Salt & Pepper to taste
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook, breaking it up with a spoon, until browned.
- Add potatoes and cook, stirring occasionally, for 20-25 minutes, or until potatoes are tender and browned.
- Stir in chili powder and salt & pepper. Cook for another 5-10 minutes, stirring constantly.
- Serve immediately.
