Basic Roast Chicken - Simple & Delicious
Let’s make a classic: a simple roast chicken. It’s easy, flavorful, and perfect for a weeknight meal.
- Protein: 1 whole chicken (about 4-5 lbs)
- Starch: 1 lb potatoes (russet or Yukon gold)
- Vegetable: 1 onion (yellow or white)
- Seasoning: Salt, Pepper
- Preheat Oven: 400°F (200°C).
- Prepare Chicken: Pat the chicken dry with paper towels.
- Season: Generously season the chicken all over with salt and pepper.
- Chop Vegetables: Chop the onion into small pieces.
- Roast: Place the chopped onion in the bottom of a roasting pan. Place the chicken on top. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Rest: Let the chicken rest for 15-20 minutes before carving.
