Basic Roast Chicken - Simple & Delicious

Let’s make a classic: a simple roast chicken. It’s easy, flavorful, and perfect for a weeknight meal.

  • Protein: 1 whole chicken (about 4-5 lbs)
  • Starch: 1 lb potatoes (russet or Yukon gold)
  • Vegetable: 1 onion (yellow or white)
  • Seasoning: Salt, Pepper
  1. Preheat Oven: 400°F (200°C).
  2. Prepare Chicken: Pat the chicken dry with paper towels.
  3. Season: Generously season the chicken all over with salt and pepper.
  4. Chop Vegetables: Chop the onion into small pieces.
  5. Roast: Place the chopped onion in the bottom of a roasting pan. Place the chicken on top. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
