Wildcat Burger: Keeping it simple and tasty
It all started with a late night craving, a forgotten bag of smoked paprika, and a desire to recreate that mood. It's a stuffed burger, a little spicy but delicious. The Wildcat Burger emerged as a very interesting way to upgrade today's basic burger. We also paid particular attention to the texture of the minced beef. It has to be "just" good. I remember one particularly chaotic summer. So I searched desperately for bold spices (smoked paprika, coriander, and a little cumin) to find the perfect ratio to create a truly wild burger.
This recipe is built in the spirit of creative cooking. Our goal was to create a burger with rich flavor and texture. Inconspicuous and "good".
- Performance: 4 hamburgers
- Preparation time: 15 minutes
- Cooking time: 18-20 minutes
- Spice level: Medium to high: Don't skimp on the chili powder.
- Raw materials:
- 1 pound ground beef (80/20 is best and holds its shape easily)
- 1 tablespoon smoked paprika
- 1 teaspoon coriander
- 1 teaspoon cumin
- Garlic powder 1/2 teaspoon
- 1/4 teaspoon cayenne pepper (optional if it's a special occasion!)
- 1/2 cup bread crumbs (preferably bread crumbs)
- 1/4 cup finely chopped onion
- 1 tablespoon olive oil
- Season to taste with salt and freshly ground pepper.
- 4 brioche buns
- 4 slices of cheddar cheese
- 2 pieces of bacon
- 1/4 cup caramelized onions
- Instructions:
- In a bowl, combine ground beef, smoked paprika, coriander, cumin, garlic powder, and chili powder (if using). Season generously with salt and pepper.
- Use this mixture to make 4 muffins of equal size. Be careful as it will shrink a little when boiled.
- Heat the olive oil in a large pot over medium heat.
- Carefully place the burgers in the hot skillet. Do not add too much bread. Cook in batches as needed.
- Bake until crispy and completely cooked through. It will take about 4 to 5 minutes per side.
- While the burgers are cooking, add the chopped onions and bacon to the skillet and sauté until softened.
- Prepare the burger: bun, burger, cheese, caramelized onions, bacon, burger bun.
- Top with remaining cheese.
- Place burgers on buns and serve immediately.
Recommended replacement for Wildcat version:**
- Sweet Potatoes: * Add 1-2 tablespoons of mashed potatoes or sweet potatoes for added moisture and mild sweetness.
- Dried apricots: 1/4 cup chopped. *Adds a chewy texture and fruity flavor.
- Walnuts (walnuts or pecans): * 1 tablespoon chopped for texture.
