Ever since I first discovered the subtle, almost-fishy-but-delicious flavor of Herring, I’ve been obsessed with perfecting a simple, yet elegant dish. It’s a dish that’s been a staple in my family for generations, and it always feels like a warm hug on a chilly evening. The key is understanding the Herring – it’s a bit forgiving, so we’re not aiming for a super-complicated preparation.

Why Herring? Herring has a wonderfully mild flavor that pairs beautifully with lemon and herbs. It's a fantastic source of Omega-3s and protein too – a win-win! Plus, it's a relative newcomer on the culinary scene, and that’s why it’s got a wonderfully understated charm.

Here’s what we’re making: Herring in Olive Oil, with a Bright Lemon & Herb Crust & a sprinkle of Paprika!

  • Ingredients:
    • 1 lb Herring fillets, skin on or off (your preference – skin on is *always* better for flavor!)
    • 1/4 cup Olive Oil
    • 2 Cloves Garlic, minced
    • 1 Lemon, zested
    • 2 tbsp Fresh Parsley, chopped
    • 1 tsp Paprika (smoked paprika is fantastic here!)
    • 1/2 tsp Salt
    • 1/4 tsp Black Pepper
    • 1 tbsp Fresh Dill (optional - but highly recommended)
    1. Prepare the Crust: In a small bowl, combine the paprika, salt, and pepper. Rub this mixture all over the Herring fillets, ensuring they are coated evenly. This creates a beautiful crust!
    2. Heat the Oil: Heat the olive oil in a large skillet over medium heat.
    3. Sear the Herring: Gently place the Herring fillets in the hot oil. Don’t overcrowd the pan! Sear for 3-4 minutes per side, or until golden brown and the flesh is opaque. Remember, the skin should be nicely crisp!
    4. Add Garlic & Lemon: Add the minced garlic and cook for about 30 seconds, until fragrant. Then, squeeze the lemon zest over the fillets – this adds a beautiful brightness!
    5. Finish with Parsley & Dill: Stir in the chopped parsley and dill (if using).
    6. Serve Immediately: Serve these beauties hot, perhaps with a side of crusty bread or roasted vegetables. A simple green salad complements this perfectly.

History & My Love Affair: I discovered Herring while traveling in Denmark. The salty, rich flavor was unlike anything I'd tasted before.
