Baked Brie – a little extra
I have been in love with the subtle magic of baked brie for years. It's a delightful classic, but the key is to elevate it. This recipe is based on the classic recipe, but adds a little smoked paprika for even more flavor. It's truly amazing and you probably don't need a Michelin star to get it. Let's start with the basics.

- 1 wheel (14 ounces) brie cheese
- 1/2 cup dry white wine (e.g. Sauvignon Blanc)
- 1/4 cup honey
- 2 tablespoons chopped fresh thyme
- 1 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter (salted or unsalted)
- A little freshly chopped paprika

- Preheating and preparation:** Preheat oven to 190°C. Place the brie in an ovenproof dish (small ceramic ramekins work best) or cast iron pot.Apply butter to the surface of the brie cheese.
- Prepare the wine-honey glaze. In a small saucepan, combine white wine, honey, thyme, smoked paprika, salt, and pepper. Cook over medium heat, stirring, until the honey has dissolved and the frosting has thickened slightly (about 5 to 7 minutes).
- Add glaze. Slowly pour the warm honey spice glaze over the brie, ensuring it is evenly coated. Don't overdo it. You want a nice golden brown dough.
- baking: Bake for 20-25 minutes, or until the brie is soft and slightly golden on top. Be careful as it may turn brown quickly!
