This cocktail aims to capture the feeling of late afternoon sunlight filtering through autumn leaves – a slightly melancholic warmth, a deep sweetness, and a smoky depth. It’s a bit more involved, but the result is a remarkably satisfying drink.

  1. 2 oz (60ml) Irish Whiskey (Old Tom preferred - this is where the 'ember' comes in) – We're leaning into the complexity here.
  2. 1 oz (30ml) Honey Syrup – I prefer a wildflower honey, but cane sugar works just fine. It adds a beautiful warmth.
  3. ½ oz (15ml) Amaretto – A little almond note, a subtle sweetness to balance the whiskey.
  4. ½ oz (15ml) Freshly Squeezed Lime Juice – Crucial for brightness and tartness.
  5. 1 tsp (5ml) Cinnamon Web Syrup – This is a *secret* ingredient. It’s a traditional syrup made from cinnamon bark, and it adds a surprising, almost floral depth. I *strongly* suggest sourcing this from a reputable supplier. It’s quite expensive, but worth it for the effect.
  6. 1/2 oz (15ml) Maple Syrup – Adds a luscious sweetness and a subtle caramel note.
  7. 2-3 thin slices of Blood Orange – This is *essential*. The blood orange provides a beautiful color, a tartness, and a slight floral aroma. Don't substitute with anything else.
  8. 2-3 dashes of Angostura Bitters – A little bitterness to cut through the sweetness and add complexity.
  9. Ice – Plenty of it!
