Sunset Harvest Vinegar
Yields: Approximately 250ml (8oz) Prep Time: 15 minutes Resting Time: 3-7 days (longer is better!)
Ingredients:
- 1 ½ cups White Distilled Vinegar (Crucial - it’s the foundation)
- ½ cup Apple Cider Vinegar
- 2 tablespoons Honey (local is always best)
- 1 teaspoon Dried Juniper Berries (For a subtle piney warmth - *substitute:* 1/4 tsp Cinnamon & ½ tsp Star Anise)
- 1 teaspoon Smoked Paprika
- 1/2 teaspoon Sea Salt (coarse)
- 1/4 teaspoon Black Pepper
- 1-2 tablespoons Fresh Rosemary (chopped - *substitute:* thyme or sage)
- 1 tablespoon Orange Zest
Instructions:
- Step 1: Combine the Base – In a clean, sterilized glass jar (or a sturdy ceramic bowl), combine the white distilled vinegar, apple cider vinegar, honey, juniper berries (or your substitute), smoked paprika, salt, pepper, rosemary, and orange zest.
- Step 2: Let it Rest (The Key!) – Seal the jar tightly and store it in a cool, dark place for at least 3 days, and up to 7 days. This resting period is *absolutely vital*. The longer it sits, the more complex the flavours will develop. Don’t rush it! Think of it as a conversation between the ingredients.
- Step 3: Strain (Optional, but Recommended) – After 3-7 days, strain the vinegar through a fine-mesh sieve lined with cheesecloth to remove the juniper berries and rosemary. (This is purely for presentation, really - the rosemary is lovely!)
- Step 4: Taste and Adjust – Taste the vinegar and adjust as needed. More honey for sweetness, a touch more pepper for warmth, or a pinch more rosemary for an herbal note.
- Step 5: Use! – This vinegar is fantastic for salad dressings, marinades, sauces, and even to infuse olive oil. It’s so versatile!
Notes: Don’t worry if it doesn’t smell intensely of juniper berries at first. That’s part of the character! The aroma will mellow over time.
