This recipe focuses on creating a rich, dark and slightly fruit fish sauce. It is a bit like the work of love, but the results are valuable. The key patience is that flavors are important.

Ingredients: (approximately 1 cup - adjust to taste!) *

  • Fish sauce (dark soy): 4 tablespoons (this is the most important component *: Look for good quality.
  • Rice vinegar: 2 tablespoons: White vinegar can work in case of trouble, but rice vinegar adds sweet sweetness and acidity.
  • Sugar: 1 tablespoon: brown sugar or cane. Slightly added depth.
  • Ginger: 1 teaspoon, finely grilled: a fresh grill is needed for the best flavor.
  • Anis Star: 1/4 teaspoon: add a subtle note and alcoholic beverages.
  • Black pepper force: 1/2 teaspoon - Ticadas - Little for more heat.

Instructions: (Follow carefully!) *

  1. Supplies: In a pan, mix rice vinegar and sugar. Bring medium fire, always stir until sugar dissolves. Remove from heat and let cool slightly. This is your stock.
